Halloumi and Pomegranite Salad

Serves 1

INGREDIANTS

60g Halloumi, thinly sliced

50g Pomegranate Seeds

60g Cooked Quinoa (this can be from a microwave packet)

100g Mixed Leaves

2 Plum Tomatoes (chopped)

1/4 Cucumber (cut into small cubes)

1/4 Onion (thinly sliced)

FOR THE DRESSING

1 tsp Honey

1tsp boiling water

2 tsp white wine vinegar

METHOD

  1. Add the dressing ingredients together, and pop the halloumi under a hot grill until browned each side.

  2. Add all the salad ingredients together with the dressing and the pomegranate seeds and quinoa and serve the halloumi warm on top.
