A Veggie Roast In One
Serves 4
INGREDIANTS
8 Veggie Sausages
600g New Potatoes, cut into quarters
1 small Butternut squash, cut into half inch chunks
200g Carrots, peeled and cut into batons
2 Onions, Quartered
3 Cloves Garlic
Few Sprigs Thyme
Half Vegetable stock cube
2tsp oil
500g Bag Spinach
METHOD
Peel and prep the vegetables and mix together in a roasting tin.
Add the garlic cloves, peeled, the thyme, salt and pepper and mix with the oil.
Place the sausages on top and Roast at 180 for 30 minutes.
Once it is all cooked through take out the vegetables and the Sausages.
Add the stock cube to tin with about 100ml water.
Over a hob carefully stir the stock with the bits left In the tin.
Stir until thickened (if it doesn't add a little sifted flour or make a roux with a little corn flour.
Pop the spinach bag in the microwave until wilted and drain.
Serve the veggies with the Sausages and gravy over the top.
