Steak and Salsa Salad

Makes 1 portion

INGREDIANTS

150g Lean Steak

75g mixed Salad Leaves

100g Artichokes (in water), chopped

1 Small Tortilla wrap

For the Salsa:

1tsp Olive Oil

2tsp Chopped coriander

1tsp Lemon Juice

3 Chopped spring onions

1/2 tsp cut/ garlic puree

5 Baby plum tomatoes squashed and chopped

METHOD

1. Chop the peppers into slices, spray and pop under a grill.

2. When the peppers are nearly done add the steak under the grill with them to cook (be sure to cook the steak until it is no longer pink in the middle)

3. Mix the Salsa ingredients together and loosen with a little water if needed. 

4. Chop the artichokes up then serve them on a small flat bread/ wrap with the Steak, peppers, salad, and salsa
