Quick Sausage Tacos
Makes 2 portion
INGREDIANTS
4 Taco Shells (60 calories per taco shell)
4 Reduced Fat Sausages (Sainsburys Taste the difference are good)/ Veggie Sausages
3tbsp 0% Greek Yogurt
1/4 Ice berg lettuce, shredded
2 Tomatoes, chopped
4 Spring Onions, chopped
2tbsp Taco seasoning (Old ell paso/ alternative)
2tbsp Tomato Puree
30g Light Cheddar Cheese, grated
METHOD
1. Take the sausage meat out of the skin and break up in a stick proof pan.
2. Once they start to brown add the seasoning and cook for a further minute.
3. Add the Puree and a little water to loosen and until cooked through.
4. Warm the Tacos and serve them with the mince, lettuce, tomato, onions, cheese and yogurt.
