A Very Eggy Brekkie

Serves 1

INGREDIANTS

4 Eggs

2 Rashers Lean Bacon

English Muffin

1 Slice Reduced Fat Cheese (about 25g)

METHOD

  1. Boil a pan of water 3/4, Crack one egg and three egg whites into cup and add it carefully to the lightly simmering water, leave for 2-3 minutes until cooked.

  2. Pop the Bacon under a hot grill.

  3. Toast the muffin and carefully drain the egg.

  4. Load the muffin with the egg, bacon and cheese on top and pop back under the grill until the cheese begins to melt.
