Beef Kofta Pitta

Serves 2

INGREDIANTS

300g Lean Mince Beef 5%

1 Courgette, peeled, grated and the water squeezed out

2-3 tsp Garam Masala

3 tsp Runny-Honey

1 Small Pitta Bread

Green salad

1 Carrot grated

60g Mixed olives Chopped

1/2 Red onion cut into skinny rings

2 TBLSP Fat free plain yogurt

Lemon juice to taste

METHOD

  1. Mix the garam masala, mince and grated courgette together.

  2. Toss the salad, carrot, onion and olives with the juice and yogurt.

  3. Half the meat mixture, half again and again to create 8 stumpy finger shapes, don't shape them too tight otherwise they will be tough when cooked.

  4. Cook in a hot greaseproof pan until they are browned and just about cooked then add the honey for the last minute or two.

  5. Serve with half a warm pitta and the salad.
