A Refreshing Tofu Salad
Makes 1 portion
INGREDIANTS
150g Tofu
20g Fetta Cheese
3tbsp 0% Greek Yogurt
Cucumber
90g Cooked white fluffy rice
1 Pak Choi (Halved lengthways)
For the Dressing:
1tsp Honey
1tsp Soya Sauce/ Tamarind
1tsp Lime Juice
1tsp White wine Vinegar
1/2 tsp cut/ garlic puree
METHOD
1. Mix the marinade ingredients together, chop the Tofu into cubes and marinade for t least 30 minutes, for several hours if possible
2. Peel and chop the cucumber in half, de seed the cucumber using a small spoon to run down the middle then cut the cucumber into small cubes. Mix this with the yogurt and a pinch of salt.
3. Take the Tofu out of the marinate and into a hot dry frying pan, Brown the tofu then pour the marinate over it with the Pak choi until it is cooked through.
4. Serve the Tofu with some rice with the yogurt on the side.
