Eggy Bread, Bacon & Tomatoes

INGREDIENTS

2 Eggs
1 Piece of thick cut crusty bread (avg. 120 calories)
1 Tomato
2 Lean back bacon rashers
100g Spinach

METHOD

  1. Whisk the egg with and dunk the bread in it.
  2. Put the bread in a hot frying pan and pour the remainder of the egg over the bread. Flip the bread once the underneath is golden and allow to cook though.
  3. Grill the bacon and tomato until cooked and wilt the spinach in a dry pan/ Microwave.
  4. Serve the eggy bread with the bacon, tomatoes and Spinach.
