Baked Sweet Potato with Corn, Cottage Cheese and Red Onion

Serves 1

INGREDIANTS

1 Small Baked Potato (about 220G Raw Weight)

170g Fat Free Cottage Cheese

1 Small red onion

1/2 tsp Sugar

3 tbsp. Sweetcorn

1 tsp Smoked Paprika

80g Green leaves

METHOD

  1. Prick the sweet potato and pop it in the microwave for 6-10 minutes or until you can poke a knife through.

  2. Slice the onion and add to a pan with a little water added each time it goes to stick ( a stick proof pan is best) cook through but don’t colour too much as it will taste bitter.

  3. Put the potato in a pre heated oven set at 230 for 15-20 minutes until cooked through and a little crisp.

  4. Stir the paprika into the cottage cheese with the corn.

  5. Once the potato is cooked add the cottage cheese and corn and the sticky red onions on top. Serve with a side salad.
