High Protien Red Pepper Veggie Soup

OK so I have pinched this recipe off BBC good food for a beautiful red pepper soup but the whole idea of the cheese is all mine! I love it and I don’t think you can knock it until you have tried it! A nice veggie way of getting some high protein in!

Serves 1 Massive Bowl of soup

INGREDIANTS

400g Tomatoes, halved

1 Red onion Quartered

2 Red Peppers

Fry Light

2 Garlic cloves

1tbsp red wine Vinegar

200g Fat free cottage cheese

2 Slices Milk Roll Bread (The most little addition)

15g Lighter Butter

METHOD

  1. In a pre heated oven of 200/180 put the tomatoes, onion and peppers to roast with the garlic and a few sprays fry light and roast for 25-30 Minutes until softened and caramelised.

  2. Mix the Vinegar into the veg and blend it all together, you could use a stick blender or machine blender adding a little water to loosen and get the right consistency,

  3. Butted the bread and heat the soup until red hot!

  4. To serve dollop the cottage cheese in the soup (thats why its got to be red hot) and dip in the buttery sweet bread.
