INGREDIENTS
1 Small Tortilla wrap/ 50g cooked rice
½ Onion chopped
½ Red pepper chopped
100g Lean minced beef/ 2 vegetarian sausages/ 3 chicken sausages/ other protein
50g Kidney beans in water drained
1tsp Smoked paprika
1tsp Cumin
½ Tin chopped tomatoes
1 Garlic clove
1 Stock cube
15g Reduced fat cheese
METHOD
1. Fry the onion and pepper until browned, add the mince and brown (draining the fat as it cooks) or if using sausages take the filling out the sausages and add to the pan breaking up the mixture.
2. Once the protein is brown add the garlic and spices then cook for a further minute.
3. Add the chopped tomato and stock cube mixed with 100ml boiling water then add the kidney beans.
4. Let it simmer to thicken and serve in a wrap or with the smaller portion of rice and the cheese sprinkled on top.

This is great with a tortilla cut into triangles and baked, a bit like nachos.
For a low carb meal serve with 100g cauliflower rice.
