Post Labour Banana Bread

My sister made this for me to take into hospital with both boys, it is still the tastiest Banana bread I have ever had, it helped me give those good pushes and reminds me of gazing over at Jesse so peacefully asleep as a new born.

Servings: 1 Loaf 

INGREDIENTS

4 Bananas, ripened and mashed 

2tbsp Margarine

1/2tbsp Bicarb

3/4 Cup Sugar

1 Egg

1tsp Baking Powder

2 Cups Plain Flour 

Pinch Salt 

METHOD

  1. Mix the banana and egg together and add the sugar.

  2. Melt the Margarine and add it to the mixture with the flour (sift it in) and the rest of the ingredients, mix well.

  3. Bake at about 180 for about an hour.

  4. Serve warm with butter or you can freeze this after it has cooled and save it until you get home with your newborn.
